Usually, when I share recipes it has a tropical sumpin’ sumpin’. OK,  these do have banana’s and coconut so legitimately, it does fall into the tropical theme… but I just have to say; this one blew me away how much guests adored it. Not only were the muffins gone immediately I had one guest come down and give me a huge hug and another confessed she froze two for her plane ride home. I was also asked for the recipe by a few so I made it again, as a double test, and decided to share here as I know my friend Johanna will want it too. With only a few trials of gluten free under my belt… these Banana Date Coconut & Almond Flour Muffins were a hit and shall now be a regular.

I ran up to take a photo… just in case they were a success and these two lonely muffins were all that were left.

Banana Date Coconut, Villa Amor del Mar

With only a few trials of gluten free under my belt… these Banana Date Coconut & Almond Flour Muffins were a hit and shall now be a regular.

Ingredients

  • ½ cup dates chopped finely (or mango)
  • 1 ½ cups coconut flour
  • 1 ½ cups almond flour
  • ½ teaspoon sea salt
  • 1 teaspoon baking soda
  • 8 large eggs
  • ½ cup melted coconut oil (or as we say, coconut oil)
  • 1/2 cup honey
  • 4-5 medium-sized ripe bananas, mashed… using 5 makes it super moist
  • 1 – 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350 degrees and grease a 12-cup muffin tin.
  2. Put chopped dates in the bottom of mixing bowl.
  3. Pour flour (both), salt, and baking soda over dates, tossing so dates are covered with flour and.
  4. Put in blender; eggs, coconut oil, honey, bananas, and vanilla. Blend until smooth.
  5. Pour blender ingredients over dry ingredients and stir until well combined.
  6. Spoon batter evenly into 12 muffin cups filling super full as when they come out of the oven they ‘deflate’.
  7. Bake at 350 degrees for 20 – 35 minutes or until a toothpick inserted in the centre comes out clean.
  8. Let the muffins cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
