Usually, when I share recipes it has a tropical sumpin’ sumpin’. OK, these do have banana’s and coconut so legitimately, it does fall into the tropical theme… but I just have to say; this one blew me away how much guests adored it. Not only were the muffins gone immediately I had one guest come down and give me a huge hug and another confessed she froze two for her plane ride home. I was also asked for the recipe by a few so I made it again, as a double test, and decided to share here as I know my friend Johanna will want it too. I ran up to take a photo… just in case they were a success and these two lonely muffins were all that were left.
