Shrimp and avocado appetizer.

There is nothing better than creating food that is easy and delicious and anything that includes shrimp and avocado together is tasty!! This was created for a guest who couldn’t eat salt at all.

Prepare:

  1. A bowl with sesame seeds, set aside
  2. Peel, devein, and clean shrimp
  3. Grate parmesan Reggiano
  4. One bowl for each guest ~ cut tiny chunks of avocado and fill the bowl halfway, sprinkle with lime juice, this must be done close to serving to prevent the avocado from browning.
  5. Peel mandarin orange and blend in a blender, sieve juice

In a pan;

  1. Sprinkle coconut oil in the pan
  2. Add cut garlic slices
  3. Add shrimp
  4. Add parmesan
  5. Sprinkle a pinch of Tarragon.
  6. Sauté about 3 minutes until done.

Put it all together;

  1. Toss shrimp with sesame seeds.
  2. Add 3 (or more) shrimp atop avocado
  3. Stir remaining pan juices and pour on top of shrimp/avocado
  4. Pour 1 teaspoon mandarin orange juice over shrimp/avocado
  5. Serve promptly

It’s easy to peel and devein shrimp but many folks are nervous about it. Here is a video showing how easy it really is, thanks, Mario.

Serve with any other seafood entry, a great steak or a simple pasta dish. This would also be great over spaghetti squash or zucchini noodles!
