Shrimp and avocado appetizer.
There is nothing better than creating food that is easy and delicious and anything that includes shrimp and avocado together is tasty!! This was created for a guest who couldn’t eat salt at all.
Prepare:
- A bowl with sesame seeds, set aside
- Peel, devein, and clean shrimp
- Grate parmesan Reggiano
- One bowl for each guest ~ cut tiny chunks of avocado and fill the bowl halfway, sprinkle with lime juice, this must be done close to serving to prevent the avocado from browning.
- Peel mandarin orange and blend in a blender, sieve juice
In a pan;
- Sprinkle coconut oil in the pan
- Add cut garlic slices
- Add shrimp
- Add parmesan
- Sprinkle a pinch of Tarragon.
- Sauté about 3 minutes until done.
Put it all together;
- Toss shrimp with sesame seeds.
- Add 3 (or more) shrimp atop avocado
- Stir remaining pan juices and pour on top of shrimp/avocado
- Pour 1 teaspoon mandarin orange juice over shrimp/avocado
- Serve promptly

Serve with any other seafood entry, a great steak or a simple pasta dish. This would also be great over spaghetti squash or zucchini noodles!
